Blueberry Muffins Recipe

  • 175 ml Optiwell Peach & Apricot
  • 75 ml Sunflower oil plus a little extra for greasing
  • 1 Medium Egg
  • 200 g Self raising flour
  • 75 g Caster sugar
  • 100 g Blueberries

 Directions

Preheat the oven to 180C and grease silicone muffin cases with a little oil.
In a small jug, beat the Optiwell, sunflower oil and egg.
In a bowl, mix the flour, caster sugar and blueberries and make a well in the centre.
Pour the liquid into the middle of the dry ingredients and gradually combine to a smooth batter.
Spoon into silicone muffin cases and bake for 18 – 20 minutes until risen and golden.
