Blueberry Relish

 Ingredients List

  • 1/4 c Vidalia Onion; Diced
  • 1/4 c Balsamic Vinegar
  • 2 tb Sugar
  • 1 tb Fresh Lemon Juice
  • 1 1/2 c Blueberries; Washed
  • Salt And Pepper; To Taste


If using a food processor, coarsely chop one small onion wedge and measure
1/4 cup. Return to processor and add remaining ingredients. Or, dice onion
and berries by hand and mix with remaining ingredients. Let sit at room
temperature for 20 minutes or until meal is served.

Makes 2 servings.

Nutritional information per serving: 145 calories; 1 gram protein; 37 grams
carbohydrate; 0.4 gram fat; 3 percent of calories as fat; 2.8 grams fiber;
0 cholesterol; 12 milligrams sodium.
