Bombay Rice Pilaf
Ingredients List
- 2 1/2 c Water
- 2 pk Instant chicken-flavored
- -broth mix
- 1 tb Lemon juice; fresh, not
- -bottled
- 1 tb Margarine
- 1 sm Bay leaf
- 1/4 c Plus
- 2 tb Golden raisins (Sultanas)
- 6 oz Uncooked brown rice
Directions
Combine all ingredients EXCEPT RICE in a 3 quart saucepan. Bring to a boil
over med-high heat. Stir in rice; reduce heat to low, cover & simmer until
all liquid is absorbed, 50-60 minutes. (Check after 45-50 minutes; add
boiling water if rice seems too dry). Remove & discard bay leaf before
serving.
