Boneless Turkey Breast with Chestnut Stuffing

Ingredients List
- 1 small onion, finely chopped
- 1 tablespoon minced garlic
- 2 stalks celery, finely chopped
- 2 tablespoons butter
- 1 teaspoon poultry seasoning
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup chestnut puree
- 4 1/2-inch thick slices of Italian bread - grilled then cubed
- 3 pound boneless turkey breast
Directions
** For the Stuffing **
In a medium saucepan saute the onion, garlic and celery with the butter and poultry seasoning until softened. Season with salt and pepper.
Mix the onion and celery mixture with the chestnut puree and grilled bread cubes. It is very important that the stuffing mixture is chilled down completely prior to stuffing the turkey breast.
** For the Turkey Breast **
Place the turkey breast on a cutting board skin side down
Place a piece of plastic wrap over the breast.
Using a meat mallet pound out the turkey breast until it is 1/2 inch thick.
Season the turkey breast with salt and pepper.
Spoon the stuffing down the center of the turkey breast.
Roll and tie the turkey breast so that it becomes one log of turkey.
Preheat your grill to medium low on one side only and use a Charbroil cherry apple or maple smoker box The indirect side of the grill should be 250-275 degrees.
Smoke the turkey breast indirect for 45 minutes to 1 hour until the internal temperature of the turkey breast is 165 degrees.
Glaze with your favorite BBQ sauce if desired
