Braised Leeks and Green Beans

Ingredients List
- 1/2 c Sherry
- 1 ts Olive oil
- 5 c Leeks, well washed
- 1 c Wild mushrooms, sliced
- 2 c Green beans, cut into
- -- 1/3" lengths
- 1 ts Orange juice
- 1/2 ts Orange peel, grated
- 1 tb Cider vinegar
- Salt & pepper
Directions
In a large skillet, heat sherry & oil over medium high heat. Add leeks &
cook, stirring frequently, for 3 minutes. Add mushrooms & beans. Saute
until the mushrooms begin to exude moisture, about 5 minutes. Stir in the
remaining ingredients & remove from heat. Serve warm.
