Breakfast Oatmeal Cranberry Pecan Cookies

Ingredients List
- 2 cups old fashioned oats + ¼ cup hot water
- ¼ cup unsalted butter
- 6 tablespoons neutral flavored oil
- 1 teaspoon vanilla extract
- 1 cup brown sugar
- 1 egg
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- Pinch of salt
- 1 tablespoon cinnamon
- ⅓ cup cranberries, dried
- ⅓ cup chopped pecans
- ⅓ cup chocolate chips
Directions
Preheat oven to 350 degrees. Line baking sheet with parchment paper
In a medium bowl, combine oats and hot water and let it sit for 5 minutes until oats are slightly softened
Add flour, baking soda, baking powder, salt and cinnamon and stir to combine
In a separate bowl, beat unsalted butter, neutral flavored oil and brown sugar until well combined add egg and vanilla and mix until well combined
Pour the wet ingredients into dry and stir until just combined
Stir in cranberries, chopped pecans and chocolate chips
Refrigerate dough for at least 10 minutes
Use a large scoop or measuring cup to drop ¼ cup portions of dough onto the prepared baking sheets
Use your fingers to gently shape the cookies and flatten slightly
Bake 10-12 minutes, until barely golden brown around the edges
Let cool on the baking sheet for a few minutes before removing to a wire rack to cool completely
