Broccoli Grape and Cucumber Salad

 Ingredients List

  • 2 medium heads of broccoli, finely chopped/ diced
  • 1/2 english cucumber, diced
  • 1 cup red/purple grapes, chopped
  • 3 Tbsp onion, finely chopped
  • 2 to 3 Tbsp unsalted sunflower seeds
  • Dressing Ingredients:
  • 1/2 cup real mayonnaise
  • 1 Tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper

 Directions

1. In a medium bowl, stir together chopped broccoli, diced cucumber, chopped grapes, diced onion and sunflower seeds.

2. In a separate bowl, combine 1/2 cup of mayo, 1 Tbsp lemon juice, 1/4 tsp salt, 1/4 tsp pepper and mix well.

3. Mix the dressing into the salad & Serve.
