Brussels Sprout Salad with Sour Cherries

Ingredients List
- - 3 cups thinly sliced Brussels spouts (about 12 ounces)
- ”“ 1/2 cup fresh or frozen & defrosted sour cherries (or 2 tablespoons dried)
- ”“ 2 tablespoons toasted hazelnuts or almonds, coarsely chopped
- ”“ 8 thin slices of Manchego cheese
- ”“ 1/4 cup Lemon-Miso dressing
Directions
1. Slice the Brussels sprouts thinly using a handheld mandolin slicer. Place the sliced Brussels sprouts into a pot of boiling water and blanch for 2-3 minutes, until bright green yet still crisp, drain immediately and place into a bowl of iced water. Allow the sprouts to cool for a couple minutes, drain thoroughly and place in a medium size salad bowl.
2. Top the blanched and chilled Brussels sprouts with fresh or dried cherries, hazelnuts or almonds and toss with the dressing. Mound the salad onto 2-3 serving plates and garnish each salad with thin slices of the Manchego cheese.
3. You may prepare the Brussels sprouts ahead, keep covered and refrigerated until ready to serve.
