Buffalo Chicken Shepherd's Pie

Ingredients List
- 1 lb sweet potatoes, cut into ½ inch chunks
- ¼ cup milk
- ½ tsp salt
- 1 tsp oil
- half of a medium onion, chopped (about ½ c)
- 1 c sliced carrots
- salt & pepper
- 1 lb lean ground chicken breast
- one 8 oz can tomato sauce
- ¼ c hot sauce (I used Frank”™s Red Hot. Use more or less, depending on how spicy you like it)
- 1 T Worcestershire Sauce
- 1 cup (about 4 oz.) crumbled blue cheese
- 1 T butter, cut into tiny pieces
Directions
1. Place the sweet potatoes in a pot, cover with cold water, bring to a boil and boil for 8-10 minutes or until tender. Drain and mash with milk and salt. Set aside.
2. While the potatoes are cooking, heat oil in a saute pan over medium heat.
3. Add onions, carrots, and a pinch of salt and pepper.
4. Cook for 5-6 minutes, or until onions are becoming translucent and vegetables are softening.
5. Add the ground chicken, and cook until done, breaking up the meat as it cooks.
6. Stir in the tomato sauce, hot sauce, and Worcestershire, and simmer for several minutes, until heated through.
7. Preheat oven to 400°F and coat a 9 inch square glass baking dish with oil or cooking spray.
8. Transfer the chicken mixture to the prepared baking dish and spread evenly.
9. Sprinkle ¾ cup of the blue cheese over the chicken mixture.
10. Carefully top the chicken and cheese with the mashed sweet potatoes and spread into an even layer.
11. Sprinkle the remaining ¼ cup of the blue cheese over the top of the sweet potatoes and dot with the butter.
12. Bake for 20-25 minutes, or until heated through and bubbling.
