Buffalo Sauce Chicken Cups

 Ingredients List

  • 1 cup shredded chicken (approximately one small chicken breast)
  • 1/2 cup buffalo sauce
  • 2 scallions chopped
  • 1 cup of mozzarella, divided
  • 1/4 cup blue cheese crumbles
  • 1 package of Pillsbury Grands Biscuits

 Directions

1. Preheat your oven to 375 degrees and spray a muffin tin with cooking spray.

2. In a medium bowl, mix together the chicken, 2/3 cup of mozzarella, buffalo sauce, scallions, and blue cheese.

3. Pull apart the biscuits and flatten them to four inch rounds. Push each one into 8 of the muffin holes, pressing them firmly in. About 1/4 of inch of the dough will stick out.

4. Distribute the chicken mixture into each of the eight cups.

5. Top with the remaining mozzarella and bake for about 12 minutes or until the edges of the biscuit are golden brown.
