Candied Yams-Citrus and Spice

Ingredients List
- 2 c Sugar
- 3/4 c Water
- 3 tb Butter or margarine
- 1/2 ts Grated orange rind
- 1/2 ts Grated lemon rind
- 3 Sticks cinnamon
- 1/4 ts Nutmeg
- 6 md Louisiana yams; fresh or
- -canned, cooked, peeled &
- -halved
- 6 Lemon slices
- 1 sm Apple; cored & sliced
Directions
Combine sugar, water, butter or margarine, rinds, cinnamon and nutmeg. Heat
to boiling point over medium heat; cook 5 minutes. Meanwhile, arrange yams,
lemon slices and apple in a 1 1/2-quart casserole. Pour syrup mixture over
other ingredients. Bake in moderate oven (350 degrees) for 30 minutes,
basting occasionally with syrup.
