Caprese Stuffed Chicken

  • 2 chicken breasts
  • 1/2 jar, 7 oz jar sundried tomatoes in oil
  • 4 fresh mozzarella cheese rounds
  • 6 fresh basil leaves
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 tablespoon minced garlic
  • 1/3 cup balsamic vinegar


Preheat oven to 350.

Cut a pocket into each chicken breast.

Tuck 1/4 of the jar of tomatoes into the pocket followed by a spoonful of tomatoes, 2 cheese rounds and basil leaves.

Add additional sun dried tomatoes and season chicken with half of the oregano and basil on top.

Close the pocket and tuck shut with toothpicks inserted at an angle. Repeat with the other chicken breast.

Place chicken into an ovenproof skillet and heat on medium heat, about 3-5 minutes on each side until browned.

Mix together garlic and balsamic and pour over chicken.

Place into the oven for an additional 10 - 15 minutes or until chicken is cooked through.

Top with chopped fresh basil if desired.

Serves 2
