Caramel Corn Cookies

 Ingredients List

  • 1/2 C sugar
  • 1/2 C butter
  • 1 C caramel corn chopped
  • 1 egg
  • 1/2 tsp almond extract
  • 3/4 C all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 C quick cooking oats

 Directions

Preheat oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
In a bowl beat sugar and butter until light and fluffy.
Add in 1/3 C chopped caramel corn and egg.
Mix with a spoon, not your mixer (or the caramel corn will be broken down too much)
Add in extract. flour, baking powder, baking soda and the remaining 2/3 C caramel corn.
Stir in oats.
Form into balls and bake for 10-12 minutes or until golden brown around edges.
