Caramel Popcorn Cookies

Ingredients List
- 1/2 cup sugar
- 1/2 cup vegetable shortening
- 1 cup caramel corn, coarsely chopped
- 1 large egg
- 1 teaspoon almond extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup quick-cooking oats
- 1/2 cup sweetened flaked coconut
Directions
Preheat oven to 350 degrees and line two baking sheets with parchment paper. Set aside.
In a large bowl, beat together the sugar and shortening with a mixer on medium high speed until light and fluffy, 4-5 minutes.
Add 1/3 cup caramel corn and the egg. Mix until well combined using a wooden spoon. Stir in the almond extract, flour, baking powder, baking soda. Add the remaining caramel corn, oats and coconut then stir once more.
Drop 1 tablespoon of the cookie dough onto prepared baking sheets 2 inches apart. Baking in preheated oven for 10-12 minutes until golden. Removed from oven and cook on baking sheets for 5 minutes then transfer to a wire rack to cool completely.
