 Ingredients List

  • 25 ml of water
  • 150 grams of sugar
  • a few drops of lemon juice
  • 10 ml of glucose (you can also omit , only serves to give greater elasticity ! !)
  • 120 ml of fresh cream (I only used 100 , I wanted to have a fairly thick consistency )
  • 20 grams of butter

 Directions

n a saucepan large enough (even if the quantity of ingredients is small !) And especially high enough, put the sugar, water and drops of lemon juice ( which help to maintain the color of pretty blond caramel) . Let cook over medium heat until melt well, add the sugar and mix well, well . Continue cooking until it reaches the desired degree of caramelization ( do not darken too much syrup : we will have a product bitter !) . Remove from heat and add the cream ... WARNING will spring ' A LOT OF STEAM AND WE WILL ALSO scalding A LITTLE' SCHIFFI , move HANDS ( for this reason I have told you to use a pan up , not to risk everything strasbordi , you can use this word? ? ! !) ...
When the steam is " sedated by his fiery spirits " , mix well so that there are no lumps (if there were to be forgiven on the fire and let dissolve all !) .
Add the butter and let it cool ...
I have immediately transferred into a glass jar , I did it cool and put it in the fridge ... where it can be stored for a week (in my opinion , even more, though everyone does as he thinks , remember that there is fresh cream !)
