Caribban Style Banana Bread

Ingredients List
- 1/2 c Butter
- 1/2 c Brown sugar
- 1 Egg, well beaten room temp.
- 1/4 c Jamaican rum
- 1 ts Vanilla
- 2 c Flour
- 1 ts Baking powder
- 1/2 ts Salt
- 3/4 ts Nutmeg
- 1 1/4 c Mashed very ripe bananas
- 1/2 c Chopped walnuts
- 1/2 c White seedless raisins
- 1/2 c Shredded coconut
Directions
Cream butter and sugar. Beat in egg until light and fluffy. Stir in
rum and vanilla. Sift all dry ingredients together. Add to
butter-sugar mixture, alternately with bananas, mixing well after
each addition. Fold in remaining ingredients. Pour into well buttered
and floured loaf pan. Bake in 350 oven for 1 hour and 15 minutes,
until bread shrinks from sides of pan. Cool 30 minutes then unmold.
Wrap tightly in foil. Serve at room temp. with plenty of sweet butter.
