Carla Hall Pecan Candied Sweet Potatoes Recipe

 Ingredients List

  • 4 lb Sweet Potatoes
  • 2/3 cup Brown Sugar
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/4 cup Bourbon
  • 1/2 cup Pecan pieces
  • 5 tbsp Butter
  • 1/2 cup Orange Juice
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 2 cups Mini Marshmallows

 Directions

1. Cover potatoes with water.
2. Heavily salt the water and bring it to a boil.
3. Reduce and simmer until tender, about 25 minutes.
4. Drain water and let potatoes cool.
5. Peel and cut potatoes into 1/4” thick rounds.
6. Layer potatoes in a greased baking dish.
7. Mix orange juice, brown sugar, butter, nutmeg, cinnamon, ginger, bourbon and salt in a saucepan.
8. Bring to a boil and cook two minutes.
9. Pour sauce over sweet potatoes.
10. Bake uncovered for 40 minutes at 350 F, until browned.
11. Turn up heat to 500 F (or use the broiler) and place marshmallows and pecans on top.
12. Cook another five minutes to brown the toppings.
