Ingredients List
- 3 T safflower oil
- 1/2 x white onion, finely grated
- 3 x carrots, peeled & finely grated
- 3 x Russet potatoes, grated
- 0 x salt to taste (optional)
- Heat onion in a nonstick skillet. Add carrots and potatoes, then
- seasoning. Saute until browned on one side. Flip over and saute on second
- side until browned. Break potato cake apart with a wooden or plastic
- spatula into small chunks or serve in wedges, cut from the round.

1 qt Carrots, raw; grated
2/3 c Juice; orange
1/3 c Orange peel; grated
3 c Sugar
1/2 ts Cloves or nutmeg; ground
1/2 ts Allspice
1/2 ts Cinnamon
Combine all ingredients in a large sauce pot. Bring slowly to a boil.
Reduce heat; and
simmer, stirriing constantly until thick. Pour hot into hot jars, leaving
1/4" headspace. Adjust caps. Process 10 minutes in a boiling water bath.
