Cauliflower Kale Puree
Cauliflower Kale Puree

Ingredients List
- 1 large head of cauliflower, chopped
- 2 cups kale, packed and chopped
- 1 clove garlic, minced
- 1 t. kosher salt, divided
- 1/4 t. black pepper
- 2 T. parmesan cheese (optional)
Directions
1. In a large pot, bring the chopped up cauliflower to a boil and cook until it is very soft.
2. While the cauliflower is cooking saute the chopped kale, garlic, and 1/4 teaspoon of kosher salt
on medium high heat for 23 minutes in a large pan sprayed with cooking spray.
3. Once the kale has wilted remove it from the heat.
4. Add the cooked cauliflower to a large bowl, blender, or food processor.
5. Puree the cauliflower until it is smooth.
6. Add the remaining salt, pepper, kale mixture, and parmesan cheese to the cauliflower puree and
stir together.
