Cauliflower with Fresh Tomatoes and Basil

 Ingredients List

  • 1 tb Olive oil
  • 4 Spring onions
  • 675 g Ripe tomatoes, skinned,
  • -deseeded and quartered
  • Salt and freshly ground
  • -black pepper
  • 2 tb Fresh basil leaves, torn
  • 1 lg Cauliflower, cut into
  • -florets
  • Fresh basil, to garnish


1. Heat the oil in a pan and add the onions and tomatoes. Cook for 1-2

2. Stir in the seasoning and basil and cook for 1-2 minutes. Meanwhile,
cook the cauliflower in boiling, salted water for 4-5 minutes until almost
tender. Drain well.

3. Arrange the vegetables on a serving plate and garnish with fresh basil.
