Cheese- and Fruit-Topped English Muffins

 Ingredients List

  • 4 Whole wheat English muffins
  • 3/4 c Low-fat riotta cheese
  • Split and toasted
  • 1/4 ts Finely shredded lime peel
  • 2 Kiwi fruit -- sliced or
  • 2 ts Lime juice
  • 1 c Sliced strawberries
  • 1 tb Sugar
  • Or peaches
  • 1/8 ts Ground nutmeg


* In a small bowl, combine riotta cheese, lime peel, lime juice, sugar, and
nutmeg. Spread cheese mixture evenly over toasted muffin halves. * Top
each muffin half with kiwi fruit slices, strawberry slices or peach slices.
