Cheese Blintz

Ingredients List
- For the Crepe:
- 1 cup milk
- 4 large eggs
- 1 cup unbleached all-purpose flour
- butter or vegetable oil for frying
- For the Filling:
- 1 lb. cottage cheese
- 1/4 lb. farmers cheese (dry cottage cheese)
- 1/2 lb. cream cheese
- 2 tablespoons sugar
- 1 egg
- For the Topping:
- sour cream
- applesauce
- fruit toppings
Directions
1. COOK THE CREPES: In a medium bowl, beat eggs. Add milk. Stir in flour and beat until smooth.
2. Pour approximately 2 spoonfuls of the mixture in a crepe or small round pan greased with butter. Cook on one side until lightly browned, then flip on a plate lined with wax paper. Repeat. Stack crepes on top of the first one with wax paper in between.
3. PREPARE THE FILLING: In a medium bowl, mix all the filling ingredients together.
4. ASSEMBLE BLINTZES: Place approximately 2 tablespoon of the filling on the cooked side of the crepe. Fold in the sides and roll up, similar to the way you roll up a burrito.
5. COOK THE BLINTZES: Fry the assembled blintze with butter over medium heat until lightly brown. Flip and lightly brown the other side.
6. Serve with applesauce, sour cream or fruit topping.
