Cheesy Beef Enchilada Dip

Ingredients List
- 1-1/2 pounds ground beef
- ½ onion, chopped
- 3 tablespoons taco seasoning (1/2 package taco seasoning)
- 2 cups enchilada sauce
- 1 (10 ounce) can diced tomatoes and chilies, drained
- 2 cups Mexican blend shredded cheese (Cheddar, Monterey Jack)
- Chopped tomatoes, onions, jalapeños for garnish (optional)
Directions
In a large skillet over medium heat, cook the ground beef until it is browned and no longer pink. Drain any excess fat.
Add in the chopped onion and cook until it is softened, about 5 minutes.
Add the ground beef back in and season it with the taco seasoning.
Stir in the enchilada sauce and cook for about 3 minutes until heated through.
Sprinkle 2 cups of cheese over the top. Cover and cook for about 3 - 5 minutes until the cheese is melted.
Add in the chopped onion and cook until it is softened, about 5 minutes.
Add the ground beef back in and season it with the taco seasoning.
Stir in the enchilada sauce and cook for about 3 minutes until heated through.
Sprinkle 2 cups of cheese over the top. Cover and cook for about 3 - 5 minutes until the cheese is melted.
