Cheesy Mexican Lasagna

Ingredients List
- 19 oz frozen cheese tortellini
- 12 oz frozen SeaPak Shrimp Scampi
- 8 oz cherry tomatoes, halved
- 3 tablespoons fresh basil, torn
- 1/2 cup shredded Parmesan cheese
Directions
Fill a large stockpot halfway with water, heat to boiling, and add frozen tortellini. Cook for 4 minutes or until tortellini are floating.
Meanwhile, place frozen shrimp scampi in a deep skillet preheated on medium high. Add cherry tomatoes and basil.
Saute, stirring occasionally, for 7-8 minutes.
When tortellini is done, add it to the shrimp skillet, turning to coat pasta with sauce evenly.
Serve immediately topped with shredded Parmesan cheese.
