Cherry Mash Egg Brownies

 Ingredients List

  • Brownies:
  • 1 stick salted butter, melted
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup flour
  • Soft Cherry Candy:
  • 12 maraschino cherries, chopped
  • 4 TBS cherry juice from the jar
  • 1/2 stick (1/4 cup) salted butter, melted
  • 4 cups powdered sugar
  • 1/2 can (of a 14 oz can) sweetened condensed milk
  • Chocolate topping:
  • 1 cup milk chocolate chips
  • 2 Tablespoons vegetable shortening
  • 1/2 cup roasted peanuts, (I used lightly salted) chopped finely

 Directions

1. Preheat oven to 350. Line an 8x8 square pan with foil and spray thoroughly with nonstick spray. Set aside.

2. In a large bowl, whisk together cocoa powder and melted butter until smooth. Whisk in sugar. Stir in eggs one at a time, then vanilla. Stir in flour just until no streaks remain. Spread batter in prepared pan and bake for 20 (ish) minutes, until a toothpick inserted in the center comes out with NO raw batter. Let brownies cool to room temperature on a wire rack.

3. Prepare cherry candy: In the bowl of a mixer beat chopped cherries, cherry juice, melted butter, powdered sugar and sweetened condensed milk until smooth. Spread over cooled brownies and immediately sprinkle chopped peanuts over the surface, lightly pressing so they stick.

4. In a microwave safe bowl, heat chocolate chips and shortening, stopping every 20 seconds to stir until smooth. Pour over brownies, then spread to cover. Refrigerate until firm.
