Chewy Cherry Cowboy Cookies

  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 1/2 tsp. baking powder
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup coarsely chopped pecans
  • 1/2 cup shredded coconut (Kate used unsweetened, but I used sweetened)
  • !/2 cup dried cherries

 Directions

Preheat oven to 350 degrees. Line cookie sheets with parchment or use a silpat.
In medium bowl, combine the flour, baking soda, salt, and baking powder. Set aside.
In large bowl, beat the butter and the sugars with an electric mixer until light and fluffy (about 3 minutes). Add one egg at a time, beating after each addition. Continue to beat until well combined. Add in the vanilla.
Mix in the flour mixture into the butter mixture with mixer on low until combined. Stir in the oats, chips, pecans, coconut and dried cherries.
Using a small cookie scoop, drop cookies onto prepared cookie sheets spacing about 2" apart.
Bake in oven about 10 - 12 minutes, or until edges just start to brown. Remove from oven and allow to cool on cookie sheet for about 2 minutes before removing to wire racks to cool completely.
