Chewy Lemon Cookies- II
Ingredients List
- 2 3/4 c all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 c butter, softened
- 1 1/2 c sugar, white
- 1 egg
- 1/2 tsp vanilla extract
- 1 zest from one large lemon
- 4 Tbsp fresh lemon juice
- 1/2 c sugar
Directions

Preheat oven to 350. Line cookie sheet(s) with parchment paper

In a small bowl, whisk together flour, baking soda, baking powder, and salt.
In a larger bowl, beat together butter and sugar until light and fluffy. Beat in egg, vanilla, zest, and juice.
Add in dry ingredients, mixing until just combined.
Roll rounded spoonfuls of dough into balls and roll in sugar.
Place on cookies sheets, 1-2 inches apart.
Bake for 8-10 minutes. Let cool for two minutes on cookie sheet before moving them to wire racks.
