Chicken Apple Saute

 Ingredients List

  • 2 tb Vegetable oil
  • 1 lb Chicken, skinned, boned
  • -and cut into strips
  • 1 md Green pepper,
  • -sliced lengthwise
  • 1 md Onion, sliced lengthwise
  • 1 c Diagonally sliced celery
  • 1 Golden Delicious apple,
  • -cored and sliced
  • 1/2 c Apple juice
  • 1 tb White vinegar
  • 2 ts Soy sauce
  • 1 tb Cornstarch

 Directions

Heat oil in non-stick skillet or wok. Saute chicken until no longer pink;
remove from pan. Saute green pepper, onion and celery until tender-crisp.
Return chicken to pan; add apple and cook for 1 minute. Combine remaining
ingredients; add to apple mixture and cook until sauce thickens.

4 servings. Fat 14 grams per serving / Fiber
