Chicken Banh Mi Wraps

 Ingredients List

  • ½ cup rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • 2 English cucumbers, halved crosswise, cut into ribbons lengthwise
  • â…” cup canola mayonnaise
  • 2-3 tablespoons chili garlic sauce
  • 4 burrito-sized spinach flour tortillas
  • 8 leaves green leaf lettuce
  • 8 ounces sliced cooked chicken breast
  • 1½ cups julienned carrots
  • 1 cup packed cilantro leaves


1. Combine vinegar, sugar and salt in a shallow dish; add cucumbers. Let cucumbers stand 20 minutes, tossing occasionally.

2. Combine mayonnaise and chili garlic sauce; spread on one half of each tortilla.

3. Arrange lettuce on top of mayonnaise mixture, followed by chicken, pickled cucumbers, carrots and cilantro. Roll each tortilla like a burrito, enclosing the ends, then slice in half on the bias.
