Chicken Tortilla Soup Recipe

Ingredients List
- 1 finely chopped onion
- 2 cloves garlic OR 1 tsp garlic powder
- 1/2 stick butter
- 1/4 cup flour
- 8 corn tortillas, cut into small squares
- 1 4 ounce can dices green chilis
- 1 8 ounce container sour cream
- 8 ounces Velveeta cheese
- 4 cups chicken broth
Directions
First, cook the chicken and set aside to cool for cutting/shredding.
In a large sauce pan, melt the butter and saute onions and garlic. Gradually add flour, stirring to make a paste. While constantly stirring, gradually add chicken broth. Add green chilis and cubed Velveeta. After the cheese melts, add corn tortilla pieces. Return chicken pieces to pan. When all heated through, remove pan from heat and add sour cream, stirring well to incorporate. Serve immediately. Makes approximately 6 servings.
*Tips: if you like your soup thicker, you may add the tortillas at the same time as the Velveeta and green chilis. As the cheese melts, the tortillas will dissolve and thicken the soup. If you prefer a more broth-like soup, then add the corn tortillas near the end, just before removing soup from heat.
