Chicken with Cheesy Mushroom Sauce

Ingredients List
- 4 boneless, skin-on chicken breasts
- salt and pepper, to taste
- 1 Tablespoon olive oil
- 1 Tablespoon butter
- 1 cup white or cremini mushrooms, sliced
- 1/2 small onion, minced
- 1/2 cup white wine
- 1/4 cup crumbled Boursin cheese, any variety
- 1 tablespoons chopped parsley
Directions
1. Season the chicken breast liberally with salt and pepper on both sides.
2. Heat the oil in a large skillet over medium-high heat, and when ready cook the chicken in it until brown on both sides (approx. 5 min).
3. Reduce heat to medium and cover the pan. Cook the chicken about 15 minutes more or until it reaches 160 degrees internal temperature. Transfer to a plate and cover with aluminum foil to keep warm. Pour out all but 1 tablespoon of the fat.
4. Add the onions to the same pan. Once they begin to soften, add the butter and the mushrooms. Continue to cook until soften, approx 1-2 min. Add the wine to the pan and scrape up all of the bits from the bottom of the pan. Cook until the wine cooks almost all of the way out.
5. Turn the heat off and whisk in the Boursin cheese and parsley. Season with salt and pepper to taste.
6. To serve, pour the cheesy mushroom sauce over the chicken. Goes well with a side of vegetables or rice.
