Chicken with Hard Cider

 Ingredients List

  • 4 c Butter; divided
  • 1 lb Apple, tart; peeled, cored,
  • 1 c Cashews; coarsely chopped
  • 1 ts Sugar
  • 3 c Hard cider
  • 1 Chicken; cut up


Saut# chicken lightly in 1/2 cup of the butter. Place apples in a buttered
shallow baking dish; top with chicken and sprinkle with nuts and sugar. Add
cider; dot with remaining butter. Cover. Bake in preheated moderate oven
(375 F.) until tender, about 45 minutes. Makes 4 to 6 servings.
