Chili Sauce #5

 Ingredients List

  • 24 lg Tomatoes; peeled and
  • -chopped
  • 3 lg Red peppers; seeded and
  • -chopped
  • 4 lg Green peppers; seeded
  • -and chopped
  • 2 Hot peppers; seeded and
  • -chopped (~RE's Mod. add 6-8
  • -Jalapeno's)
  • 1 c Sugar
  • 3 c Cider vinegar
  • 2 tb Salt
  • 4 lg Onions
  • 2 Cloves garlic
  • 1 ts Ground cloves
  • 2 ts Ginger
  • 1 1/2 ts Cinnamon
  • 1 1/2 ts Pepper

 Directions

Combine all the ingredients except the spices in a large kettle and bring
to a boil. Reduce heat and simmer for 2 hours. Add the spices and continue
cooking for 15 minutes. Check the seasoning and texture and cook longer if
it needs thickening. Pour into hot sterilized jars and seal.
