Chinese Blood Nourishing Egg Stew with Plum

Ingredients List
- 4 eggs
- 5 oz. Chinese dates (15-20 large ones)
- 4 oz. peanuts, raw and fresh, or dried and reconstructed in water
- 15 Chinese preserved plums (1~1 1/2 oz.)
- 1/2 oz. ginger
- 2 T. sugar crystals
- 1 1/2 T. light soy sauce
- 3 T. vinegar
Directions
Boil the eggs until well done and pull off the shells. Blanch the peanuts and dates in boiling water for 5 minutes. Finely slice the ginger.
Put the preserved plums, ginger, sugar crystals, soy sauce and vinegar into a pot of water, and blend them into a sauce. Boil the eggs, dates and peanuts in the sauce for 20 minutes.
Turn off the heat and leave the eggs, dates and peanuts soaked in the sauce of 2 hours, so as to let them sufficiently absorb the flavorings.
Boil the stew again with strong heat, until the sauce thickens.
Put the preserved plums, ginger, sugar crystals, soy sauce and vinegar into a pot of water, and blend them into a sauce. Boil the eggs, dates and peanuts in the sauce for 20 minutes.
