Chocolate Chip and Coconut Rum Cookies

 Ingredients List

  • 1 c All purpose flour 1/4 c Granulated sugar 2 tb All purpose
  • flour 1 Large egg, lightly beaten 1/4 ts Salt 3/4 ts Vanilla
  • 1/2 ts Baking soda 3/4 ts Light rum 6 tb Unsalted butter,
  • softened 1/2 c Grated coconut 1/2 c Packed light brown sugar 1/2 c
  • Semi-sweet chocolate chips
  • Preheat oven to 375 degrees. Sift the flour, salt, and baking soda
  • together in a bowl and set aside. In another bowl, using an electric mixer,
  • beat the butter, brown sugar, and granulated sugar until the mixture is
  • light and fluffy. Add the egg, vanilla, and rum. Beat the mixture well.
  • Fold in the flour mixture, coconut, and chocolate chips. Form the cookies
  • on a baking tray, using a small ice cream scoop. Bake for about 8-10
  • minutes. Yield: 24-30 cookies.

1 1/2 c Bread Flour
2 tb Dry Milk
1 1/2 ts Sea Salt
1/3 c Toasted and Chopped Almonds
1/3 c Toasted and Ground Almonds
2/3 c Semisweet Choc. Chips
1 c Plus 3 tb. Water
3 tb Honey
2 tb Canola, Sunflower or Saf-
Flower Oil
1 ts Almond Extract
4 ts Active Dry Yeast

Add all ingred. at the same time according to your mfg. instructions. Bake
on WHOLE WHEAT CYCLE... Welbilt ABM100-White Bread Cycle. NOTE: Turned out
moist and choclate-flavored. Very good as a snack w/ a cup of coffee!
