Chocolate Chip Cheesecake Bars

  • Chocolate Chip Cookie
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup (2 sticks or 226g) butter, softened
  • 1 package (12 ounces or 2 cups) semisweet chocolate chips
  • 1 teaspoon vanilla
  • 1 egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Cheesecake Filling
  • 2 packages (16 ounces) cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 eggs, room temperature

 Directions

Heat oven to 350°F.
In a medium bowl combine the granulated and brown sugar, 2 sticks butter and beat until incorporated.
Add in 1 teaspoon vanilla and egg and mix until combined.
Sift together flour, baking soda, and salt and add to the wet ingredients.
In a small bowl, beat cream cheese, sugar and egg until smooth.
In ungreased 9- or 8-inch square pan, break up half of cookie dough. With floured fingers, press dough evenly in bottom of the pan to form crust. Spread cream cheese mixture over dough. Crumble and sprinkle remaining half of dough over cream cheese mixture.
Bake 35 to 40 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours until chilled.
