Chocolate Chip Cookie Oatmeal with Peanut Butter Yogurt

 Ingredients List

  • ½ cup of oatmeal (we use plain, old fashioned oats)
  • 1 pinch of salt (we use pink Himalayan sea salt: The Spice Lab Finely Ground Pure Himalayan Salt, 2 pounds Chocolate Chip Cookie Oatmeal
  • ½ teaspoon of vanilla extract
  • 1 tablespoon of cacao nibs (we use this brand: Healthworks Certified Organic Raw Cacao Nibs ”“ 16oz/1 Pound Chocolate Chip Cookie Oatmeal
  • 1 cup of water
  • Sweetener of choice: 2 pinches of stevia extract powder or 1-1.5 tablespoons of honey
  • 1 tablespoon of yogurt (to add if soaking overnight to reduce phytates)
  • Peanut Butter Yogurt
  • ½ ”“ ¾ a cup of yogurt depending on how much yogurt you like with your oatmeal
  • 1 pinch of salt
  • ½ teaspoon of vanilla extract
  • 1 tablespoon of peanut butter or ½ tablespoon of peanut flour (You could even use almond butter)

 Directions

1. Mix everything together well in a bowl.
**if soaking your oatmeal, you would stop here and leave overnight or for a few hours to reduce phytates
2. When ready to eat:
3. Cook oatmeal as directed on package.

Peanut Butter Yogurt

4. Mix well and serve on top of chocolate chip cookie oatmeal
