Chocolate Cinnamon Crinkle Cookies

Ingredients List
- · 1 ½ cups all-purpose flour
- · ¾ cup unsweetened cocoa powder
- · 2 tsp. instant espresso powder
- · 1 ½ tsp. baking powder
- · 1 tsp. ground cinnamon
- · ½ tsp. ancho chili powder (optional)
- · ¼ tsp. salt
- · 1 stick unsalted softened butter
- · 1 ½ cups granulated sugar
- · 2 eggs
- · 1 tsp. vanilla extract
- · Powdered sugar
Directions
1. Sift together flour, cocoa, espresso powder, baking powder,cinnamon, chili powder, and salt in a mixing bowl.
2. Beat butter and sugar in large bowl until combined. Whisktogether eggs and vanilla; add to butter mixture and beat until incorporated.Add flour mixture; mix on low speed until combined. Cover dough and chill forat least one hour.
3. Preheat oven to 350F; line baking sheets with parchmentpaper. Shape dough into 1-inch balls. Roll balls in powdered sugar two times,than arrange on prepared baking sheets, spaced 2 inches apart. Bake cookiesuntil tops are cracked yet still soft, 10-11 minutes; DO NOT OVER BAKE! Letcookies cool on cookie sheets until set then remove to cooling rack.
