Chocolate Covered Cherry Cookie

- ½ cup butter, softened
- 1 cup sugar
- 1 egg
- 1 ½ teaspoons vanilla
- 1½ cups all-purpose flour
- ½ cup cocoa
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 48 maraschino cherries, drained, reserve juice
- Frosting:
- 8 ounces semi-sweet chocolate baking bar
- ½ cup sweetened condensed milk
- ¼ teaspoon salt
- 2 teaspoons reserved cherry juice
Directions
Preheat oven to 350 degrees.
Using electric mixer blend butter, sugar, egg and vanilla. Add flour, cocoa, salt, and baking soda to butter mixture. Blend. Dough will be thick. Shape into 1 inch balls. Place on cookie sheet 2 inches apart.
Push 1 whole cherry into center of each ball. Set aside and make frosting.
In microwave melt chocolate for 1 minute. If not completely melted microwave another 20 seconds. Add condensed milk to melted chocolate and stir until smooth. Add salt and cherry juice and stir until blended.
Spread ½ teaspoon of frosting on each cookie covering the cherry.
Bake 8 to 10 minutes.
