Chocolate Dipped Pear Popsicles

Ingredients List
- 2 pears, peeled, cored, and sliced
- ½ cup water
- â…› cup simple syrup*
- 1 tbls fresh lemon juice
- ~~ Chocolate "Magic Shell" Topping ~~
- 1 cup dark chocolate chips
- 2 tbls coconut oil
Directions
Combine first four ingredients in a blender or food processor and puree until smooth. Fill up your favorite popsicle molds with puree and freeze for several hours or until completely frozen.
To make Chocolate "Magic Shell" Topping, combine chocolate chips and coconut oil in a microwave-safe bowl. Stir together and then microwave in 30-second increments until the chocolate chips have completely softened. Remove from microwave and stir together until smooth. Cool slightly.
Once popsicles are frozen, remove from mold and quickly dip into chocolate topping. Let harden then enjoy!
Store leftover chocolate topping in a mason jar with lid. Reheat in microwave (with the medal lid removed) until it's melted. Heat in 30 second bursts, stirring in between to see if it's fully melted and smooth.
*To make simple syrup, combine equal parts water and sugar in a medium saucepan. Bring to a boil, stirring, until sugar has dissolved. Allow to cool and store in the refrigerator until ready to use or up to a couple weeks.
