Cilantro Rice

 Ingredients List

  • 1/3 c Vegetable oil
  • 1/4 c Fresh lime juice
  • 1/2 ts Salt
  • 1/4 ts Pepper
  • 3 c Cooked long-grain white
  • -rice; room temp
  • 3/4 c Each green/red bell
  • -peppers; chopped
  • 1/3 c Green onions; thinly sliced
  • 1/4 c Fresh cilantro; minced


1. Whisk the oil, lime juice, salt and pepper in a bowl until well blended.
2. Add remaining ingredients. Toss to coat with dressing.

Makes 5 cups or 8 servings.
