Classic Mashed Potatoes

Ingredients List
- 7 medium-sized red potatoes (no need to peel)
- 1 teaspoon salt, plus more to taste
- 2 garlic whole cloves
- 1/4 cup sour cream
- 1/4 cup olive oil
- 2 TB pastured butter, cubed
- 2 TB fresh chives
- pepper, to taste
Directions
1. Place the potatoes and whole garlic cloves in a pot and add just enough water to cover the potatoes.
2. Add 1 teaspoon salt to the water.
3. Bring to a boil, then reduce. Cook until the potatoes are soft when pierced with a fork.
4. Remove the potatoes from the water to a large bowl.
5. To the potatoes add: sour cream, butter, and olive oil.
6. Mash the ingredients together.
7. Add in the chives and stir to combine.
8. Add the salt and pepper to taste.
9. Serve warm.
10. Freshly grated cheese and pastured bacon make wonderful toppings for these delicious potatoes too.
