Ingredients List
- 2 large boneless skinless chicken breasts
- 1 Tb. olive oil
- Salt and pepper
- 2 romaine hearts, chopped
- 3 hardboiled eggs, peeled and chopped
- 2/3 cup crumbled blue cheese
- 2 avocados, chopped
- 1 cup blackberries
- 1 cup raspberries
- 1 cup toasted almonds
- Creamy Garlic Lime Dressing Recipe
Directions
1. Preheat the grill. Then rub the chicken breasts with oil, and salt and pepper liberally. Grill for 5 minutes per side over medium heat. Allow the chicken to rest for at least 5 minutes before chopping. Then cut into bite sized pieces.
2. Meanwhile chop the romaine lettuce, eggs and avocados. Place the lettuce on a large serving platter or bowl. Arrange all the toppings on top of the bed of lettuce and serve with Creamy Garlic Lime Vinaigrette.
