Coconut Apricot Strips

 Ingredients List

  • 1/2 c Shortening (half butter)
  • 1/2 c Confectioners sugar
  • 2 Egg yolks
  • 1 c Flour
  • 1/2 c Thick apricot preserves
  • 1/2 c Thick pineapple preserves
  • Coconut Meringue

 Directions

Heat oven to 350. Mix shortening, sugar & yolks thoroughly. Stir
flour into sugar mixture. Press & flatten to cover bottom of
ungreased oblong pan, 13*9 1/2*2". Bake 10 minutes. Remove from oven
& spread preserves, then with Meringue. Return to oven; bake about 20
minutes, until Meringue is golden brown. Cool slightly; cut into
small bars.
