Coconut Cream Cheese Pie

Ingredients List
- Crust
- 2 C graham cracker crumbs
- ½ C melted butter
- 2 Tbsp sugar
- Filling
- 3- 6 oz packages of cream cheese {room temperature}
- 14 oz can sweetened condensed milk
- 2 Tbsp lemon juice
- 2 Tbsp coconut rum
- 3 egg yolks
- 1½ C sweetened coconut flakes
Directions
Crust
1. Combine all ingredients and mix well
2. Using your hands, press on bottom and up sides {about 2 inches} of a 9 inch spring form pan
3. Let set in freezer while preparing filling
Filling
1. Beat cream cheese until creamy
2. Add sweetened condensed milk, lemon juice, rum & eggs and beat until combined
3. Stir in coconut flakes
4. Pour into prepared pan and chill in refrigerator until set {about two hours}
5. Top with whipped cream, if desired
