Coconut Peppermint Fudge

Ingredients List
- 1/2 cup coconut butter
- 1/4 cup coconut oil
- 4 Tbsp honey
- 1 1/2 tsp peppermint extract
- 1/4 cup unsweetened, shredded coconut
Directions
Melt the coconut butter, coconut oil, honey and peppermint extract in a double boiler over medium heat until smooth, stirring occasionally. Should take 5 to 8 minutes.
Remove from heat and stir in the shredded coconut.
Pour into a 6x9 inch dish lined with parchment paper and place in freezer for 60 minutes or until hardened.
Remove from freezer and cut into squares.
