Coffee Fudge Chunk Ice Cream

Ingredients List
- 1 can full-fat coconut milk
- 1 cup almond, cashew, or nut milk of choice
- 1/4 cup cold coffee
- 1/2 cup raw honey
- 2 tbsp instant espresso
- Fudge chunk
- 2 cups Enjoy Life Dark Chocolate Chips
- 1 tbsp almond milk (or nut milk of choice)
Directions
Place ice cream ingredients into your high-speed blender and blend until smooth
Pour ice cream mixture into a tupperware and freeze for an hour or so, until cold
Pour mixture into your ice cream machine, and proceed following the manufacturer’s instructions
Once done, pour ice cream into your tupperware (I use a bread pan)
Heat chocolate until melted and pour in almond milk- mix to combine*
Drop spoonfuls of the fudge into the tupperware and swirl around with a fork or a toothpick
Freeze for an hour until it hardens enough to create scoops!
If completely frozen, thaw for 15 minutes minutes before scooping
