Cold Thin Noodles

 Ingredients List

  • 1 1/2 c Chicken broth
  • 3 1/2 tb Soy sauce
  • 2 tb Sugar
  • 1 1/2 tb Mirin* or dry sherry
  • 1 tb Fresh gingerroot; grated
  • 8 oz Thin Japanese noodles;
  • -cooked & chilled
  • 1 c Cucumbers; thinly sliced
  • 1 cn (11 oz) Mandarin oranges;
  • -drained
  • 1/4 c Cilantro; chopped

 Directions

* Mirin is a syrupy rice wine.

Mix broth, soy sauce, sugar and mirin or dry sherry in a small saucepan.
Heat about 1 minute; stirring constantly, until sugar dissolves. Add
gingerroot and chill.

To serve, pour over noodles; add cucmbers, oranges and cilantro; toss.

Makes 4 side dish servings.
