Connie's Pear Chutney

 Ingredients List

  • 10 c Sliced, firm, ripe pears --
  • Abt 5 lb.s
  • 1/2 c Finely chopped green pepper
  • 1 1/2 c Seedless raisins
  • 4 c Sugar
  • 1 c Chopped crystallized ginger
  • 3 c Cider vinegar
  • 1/2 ts Pickling salt
  • 1/2 ts Allspice berries
  • 1/2 ts Whole cloves
  • 3 Cinnamon sticks -- 2" long

 Directions

Place pears & next 6 ingredients in a saucepan. Tie allspice & cloves in a
cheesecloth bag & add along with cinnamon. Cook slowly until pears are
tender & mixture thick, about 1 hour.

Remove spices. Ladle into clean, hot half-pint jars, leaving 1/2 inch
headspace. Seal. Process for 10 min in a boiling-water bath or steam
canner.
