  • 1/2 c Leeks; whites and light
  • -green parts, finly sliced
  • -OR coarsely chopped onion
  • 3/4 c Water; (or manuf. recom.)
  • -(up to 1)
  • 1/4 c Dried currants or raisins
  • 1 tb Ground corander seeds
  • 1 Bay leaf
  • 1/2 ts Salt; or to taste
  • 1 1/2 lb Carrots; in diag 1/2" slices
  • 1 tb Freshly squeezed lemon
  • -juice; (optional) (up to 2)
  • 1 tb Minced fresh parsley
